The coffee beans, or seeds as they are correctly called, generally come in pairs of two and are called flat beans. Our coffee from Tanzania, however, is a "Peaberry" coffee, which means there is only a single small pea-like bean inside the fruit. Peaberries are usually separated from the normal flatbeans as they differ in size and texture and behave differently during the roasting process.
